IT’S KINDA LIKE BABY CHEESE!

From The Cow & The Curd website: Remember, all cheese was once a curd. Before cheddar is formed into wheels of cheese, it consists of two parts: curds and whey (think cottage cheese). The little irregularly shaped morsels (curds) are separated from the liquid (whey) and continue on through the cheese making process, molded into wheels and aged. However, they are also eaten in this unprocessed, 100% natural state. Or even better, cheese curds are battered and fried.

A truck that offered hot, battered and deep-fried cheese curds. Just big, heaping baskets of them, still steaming-hot, maybe topped with a little gravy or something…

Needless to say, when I heard about The Cow And The Curd, I got a little excited. Because that’s exactly what this new food truck will be doing–bringing curds (and dipping sauces) to the people. Read more at Philly Magazine

The award-winning food truck that brings to you a Midwest culinary staple—cheese curds. Their menu features just one one item: batter fried cheese curds served with a variety of batters, infusions, and sauces. Their Classic curds are made of white and yellow Wisconsin cheddar cheese, and they also do a list of specialty curds like sun-dried tomato, jalapeño, basil and garlic in white cheddar, and goat cheese curds.

Prices start at $6 and go up to $12.
